Mixed bean salad

Use any 3 varieties of beans (haricot/chickpea/pinto/cannellini ), tossed in salad dressing, and served on a bed of mixed green leaves and slices of avocado.

Simple salad dressing:

3 tablespoons of rapeseed oil or flaxseed oil. 1 tablespoon of lemon juice or apple cider vinegar. Dash in some umeboshi plum seasoning. Fresh herbs & raw garlic (optional).
