Very Vegetabley Pizza – once a week special treat!

Create a pizza base from a Gluten-free pre-blended pizza flour, buy a pre-made gluten-free pizza base from the Gluten-free aisle in your supermarket, or make your own!

Spread on a ½ tube of organic concentrated tomato paste, followed by 1 x tin of organic chopped tomatoes or a little organic passata sauce. Using pre-cooked tinned spinach place a dessert-spoon of spinach at 5 points on the pizza base. At this point, I like to mix 1.5 cups of grated or crushed carrot into the tomato mixture.  

Add a tsp of green pesto on top of each dessert-spoon of spinach. Halve some cherry tomatoes and adds with your extra toppings of choice (sweetcorn, ham, tuna, mushroom). Finally sparingly sprinkle some grated goat cheese, topped with black olives if desired. Bake in the oven for 25 minutes.

To make your own gluten-free pizza base!: Create pizza base from 8oz gluten free bread flour (doves), 1 tsp gluten-free baking powder, 1 tsp salt, 1 tbsp olive oil. ¼ pint of warm water. Sift flour, baking powder and salt into a bowl. Make a well in the center and add in the oil and water stirring vigorously. Knead for about 7 minutes and roll out onto a baking tray and place in the oven for 10 minutes. The oven should at this time be rising to 170C.
