Coco-Nutty Granola

3 cups of coconut flakes, 2 cups almonds/cashews/pecans/walnuts, pumpkin seeds all roughly chopped. 2 tbsp chia seeds, 1 tsp ground cinnamon, 80-100g coconut oil and 2 tbsp rice malt syrup (optional)

Preheat the oven to 120 degrees and line a baking tray with baking paper. Combine all the ingredients, then spread evenly on the tray. Bake for 15-20 mins until golden, turning halfway through the cooking time. Allow to cool and eat while still crunchy. This is lovely blended with yogurt or the flax-blend listed below.
